Breakfast is not boring.
This is the breakfast that I jump out of bed for. Actually, I eat it for whatever meal is happening - second breakfast, lunch, afternoon tea, dinner, dessert. It is THAT satisfying.
I take the Fruity Quinoa recipe from Meat Free Monday (pg 139) and then go crazy with whatever I’m in the mood for at the time:
In a small saucepan bring 250mL almond milk and 1/2 teaspoon vanilla extract to the boil. Stir in 50g quinoa, reduce the heat to low and simmer gently for 10 minutes or until most of the liquid has been absorbed. Remove from the heat and stir in 50g blackberries and 1 tablespoon of chopped pecans. Spoon into 2 bowls.
Typically I’ll add a few heaped spoonfuls of unsweetened yoghurt with dried fruit like prunes and dates for iron, kiwifruit, banana and heated berries. Maybe a squeeze of lemon juice. I chop an assortment of nuts (not just pecans) - walnuts are really good for the omega 3 and almonds work a treat! Then I add cinnamon and mint if it’s looking beautiful and then I grab a spoon and go for gold.
I was lucky enough to have freeze dried strawberries on hand too for the popping colour.
Best way to start the day.
